Torrijas, a perfect Easter treat
At Las Tapas de Lola we love to celebrate Easter with torrijas, perfect treat to use up what's in the cupboard / fridge!
Torrijas
Ingredients
- Old / dry brioche (or any bread to hand!) cut to 1.5 / 2cm slices
- 600ml milk
- Peel of lemon & orange
- Stick of cinnamon
- 2 tablespoons of sugar
- 3 eggs (beaten)
- Olive oil to fry
- Powdered cinnamon & sugar to coat
Method
- Slice the bread into 1.5 / 2cm slices.
- Add the milk; lemon & orange peel; cinnamon stick; & 2 tablespoons of sugar to a pot, bring to boil then set aside to cool.
- Have the beaten eggs in a bowl ready to dunk
- Have the powdered cinnamon & sugar in a bowl ready to coat.
- Heat the pan with olive oil to a medium / high heat.
- Dunk the bread in the milk; then pass through the egg; then fry.
- Fry both sides until toasted.
- Remove from pan onto a plate with kitchen paper to soak excess oil.
- Toss / coat in the cinnamon/sugar mix & serve.
