What's that secret ingredient?
We first came across fried aubergine in the Old Town, Marbella. There's a small street called Calle de San Lázaro - the width of 2 people - with 4 bars serving great tapas. But the stand-out bar was La Taberna "La niña del pisto" that served the most delicious aubergine, amongst other greats! If you're ever in Marbella, you have to check it out - full of locals and a great menu. They eventually gave us their secret ingredient that keeps the aubergine firm, yet succulent... their secret is safe with us.
